Oceania Cruises, the world’s leading culinary- and destination-focused luxury cruise line, has unveiled a bold new evolution in onboard dining with the launch of twelve innovative Nikkei dishes at its acclaimed Red Ginger restaurant. This new menu celebrates the dynamic fusion of Japanese culinary finesse and the vibrant flavours of Peru, taking gastronomy at sea to thrilling new heights.

Nikkei cuisine traces its origins to the late 19th century, when Japanese immigrants settled in Peru and began blending their traditional cooking with local Peruvian ingredients. The result is a distinctive culinary style that features:

Red Ginger: The Culinary Heart of Nikkei on Oceania Cruises

Red Ginger, Oceania Cruises’ signature Pan-Asian restaurant, is the first in the fleet to debut the new Nikkei menu. It recently launched aboard Oceania Vista® and will feature on the brand-new Oceania Allura™, launching next month. By early 2026, the menu will be rolled out across the entire Oceania Cruises fleet.


Chef Gustavo Sugay, with over 20 years of experience in Nikkei cuisine, has led the menu’s development, drawing on both heritage and innovation to deliver something truly unique.


“The carefully crafted new Nikkei menu items further augment the ongoing evolution of our driving philosophy of serving The Finest Cuisine at Sea,” said Jason Montague, Chief Luxury Officer of Oceania Cruises.

Red Ginger Nikkei Menu Highlights

Among the standout dishes now available on select Oceania Cruises ships are:


  • Ceviche Nikkei – Marinated tuna with leche de tigre, coriander, sesame oil and red chilli.
  • Peruvian-Style Beef Short Rib – Tender short rib with lomo saltado sauce and miso sweet potato mousseline.
  • Cazuela de Arroz Nikkei – Miso-glazed scallops on bomba rice, finished with citrusy chalaquita.
  • Soft Shell Crab Tempura Bao Buns – Bao buns filled with lightly fried crab and Nikkei-style zarza.
  • Chicken Anticuchos – Grilled skewers with huancaína sauce, inspired by Peruvian street food.
